Meet Amy

Our Catering Coordinator

Amy Tanaka, BSc, was born and raised in Toronto, Canada.  She graduated from the University of Guelph with an Honors degree in Science, with a specialization in nutritional science. Since a young age Amy has been involved with competitive sports and managerial roles. This has given her a unique combination of drive and business smarts that allows her to assist her clients flawlessly.  In addition, she has been involved in the restaurant industry for over 15 years in areas ranging from fast food and casual eateries, to fine dining, bar, and full service catering. This diverse experience allows Amy to work with all different types of clients with ease.

Amy has been with Clayton’s since its inception in 2004.  During that time she has taken on many roles within the restaurant, including management, server, and catering coordinator.  Furthermore, she has planned and organized numerous weddings, rehearsal dinners, holiday, birthday, and anniversary parties, business gatherings, brunches, bachelorette parties, and bridal luncheons.  She has the outstanding organizational and planning skills to ensure that your event is exactly how you imagined it.   Amy has a special eye for detail and a knack for knowing what the client desires.

Amy has worked all types of events, everything from simple drop-off bagged luncheons, beachfront wedding, 50th Birthday party, causal buffet holiday party, cocktail evening party, to formal sit-down weddings.  No event is too small or too big.

Amy will personally meet with you in order to discuss your specific needs and establish the menu options that work best for you and your budget.

Chef Dimitri Xinidis

Originally from Athens, Greece, Dimitri Xinidis, Executive Chef of Clayton’s Siesta Grille, started in the food industry by helping out at the family restaurant in Osprey, Florida. Inspired by his parents, Dimitri began his culinary career in 1999 when he attended the American Culinary Academy. Upon graduation, Dimitri was employed with the four star Peabody Hotel in Orlando and other prestigious establishments throughout Florida. Siesta Grille’s Mediterranean influenced menu items are reflective of Dimitri’s culinary and cultural experiences.
